I have been to Akashi at paragon orchard for their japanese food, such as my all times favourite shark fin chawanmushi and minced meat with onsen eggs , and i realised Akashi has a restaurant itself serving omakase at orchard parade hotel !
well, after my visit here, i realised many visitors came here for their unagi eel rice as well, which i will give a try soon . But as for tonight, omakase to satisfy my tummy with seasonal delights 😉

A) KAMPACHI BELLY – AMBERJACK (間八)
Just look at the thickness , look at it , LOOOOOOKKKKKK ! omg , its duper thick and juicy , fresh at bites. That fine linings of the belly gives much photo attractions too.
B) TAI – SEABREAM (鯛)
Thinly sliced, freshwater . The skin is just lightly seared , giving some slight crisp experience. Ponzu dipping sauce pairing .
C) BOTAN EBI – SHRIMP (ぼたんえび) & AWABI – ABALONE (鮑)
Abalone is my fav pick in this combo of two items. Topped with sweet liver sauce , even though the two cut pieces of abalone is lightly boiled, but its still firm and chewy at bites.
D) AKAGAI – ARKSHELL (赤貝)
ARKSHELL !!!!! Its been awhile since i missed eating this shell food ! Very pleased with the freshness in every bite , crunchy just like chewing squids .
E) OOTORO – FAT TUNA BELLY (大とろ)
Ootoro, fattest belly of a bluefin tuna fish. Served here in a rolled form , topped with watery smashed ginger. Thick enough , rich and creamy
3. SUSHI & ASSORTED
A) HIRAME SUSHI – FLUKE / FLOUNDER (平目, 鮃)
*COUGH* Too much wasabi !!!! told chef to lighten the wasabi serving on subsequent pieces.
B) SHIMA-AJI SUSHI – WHITE TREVALLY (しま鯵)
The fresh red and white colour combination , topped with soy sauce , just got me whipping out my camera and snap ! This time, wasabi level was comfortably better .
C) KINMEDAI – ALFONSINO (金目鯛)
Kinmedai is part of the sea bream family . Took a closer snap of the sushi rice below , because not just sushi need to be fresh , i am particular bout the sushi rice served. At Akashi, the sushi rice is warm cooked , mostly coated with very light soy sauce which is very favourable to my tastebud.
D) MARINATED TUNA SUSHI
nope, nothing photogenic here . But just look at the shining and finely cross-cut texture of this gem ! it got me snapping photos away and can’t bear to eat such a cute piece :(((
E) CHUTORO SUSHI – MEDIUM FAT TUNA BELLY (とろ)

Minced ootoro, small cut quail eggs , maximum caviars and topped with spring onions. How creamy and lovely this is ! can i have one more scoop ???
G) UNI SUSHI – SEA URCHIN (雲丹, 海胆)
Red meat urchin alert ***** Just love how creamy and overloaded this piece is. Topped with ginger instead of wasabi.
This is the fin of the flounder fish . Finely sliced , parallel cutting.
I) SEASONAL (ii) – SUJIKO SALMON ROE (すじこ/筋子)
This is a seasonal and rare to find kind. It is salmon roe , but tasted less sweet , more to give a plain taste experience and merely tasting the freshness of it from water.
J) SUSHI ROLL
Seldom do i get a sushi roll with so much ingredients inside. Featuring roll sushi with chewy chutoro , creamy uni and sliced pickles. Amazing how these three elements clapped to create such a comfortable and favourable taste.
4. CLEAR SOUP
Fishcakes, mushrooms, spring onions , wakame seaweeds.
5. DIGESTIVE GREEN TEA
This is named HoujiCha . This is different from those green tea usually served at the start of a meal. Houjicha is good for digestion , as such best to be consumed after a wholesome meal.
Winter melon as usual, ending my splendid meal tonight.
FOOD : Memorable , pleasing , especially the seasonal dishes which i will come back again for .
SERVICE : Friendly service , chinese waitresses and chefs to serve.
AMBIENCE : Simple wooden built restaurant , with loads of counter seats as well as dining tables for groups as well as business client dining.
