Revisit: SHOUKOUWA [2-michelin]

I’m back once again , at Shoukouwa this winter season and welcoming my friend back from Aussie ! It’s really nearly a year since I last seen my friend and thus we decided to go all the way for the dearest menu , at least it’s gonna be an assuredly scrumptious meal for my friend before leaving Singapore again 😦

This winter season , at Shoukouwa , includes :-

1. APPETISERS

Kabura with fresh piece of unagi cuts, sweet broth served cold.

2. SASHIMI

My highlights in this palette : Mackerels was thick and succulent ! Other raws include Torigai , flounders and fresh botan ebi.

3. STARTERS

TAKE ALL THE MINCED SPRING ONIONS AND GARLIC AT OWN RISK !

This may look abit of a mess as a photo overall, due to the blue plate used. But the taste of this Sea Perch is a bomb !  The light sauce reminds me of Chinese Hua Diao wine (花雕酒) , a Chinese cooking wine. Very sweet combination here.

With the minced spring onions and garlic, I feel like this is so homely Chinese Asian , than a Japanese. LOVE IT !

4. SEASONAL DISH

This winter season ,  featuring Snow crab with shark fin gravy , decorative sides with ginkgo nuts and miso sauce.

The crab meat is fluffy soft ! we were told to try dipping each scoop of crab meat into the warm shark fin sauce , and yes , it’s a sweet combination !

Besides, love the ginkgo nuts with salt coating.  It’s always my fav anyway =)

 5. SUSHI

This time I was given an exposure to more different parts of the tuna fish , so as you can see,, more red meats.

Seared Bonito , Sekamai and of course, sea urchins, are some of my favorites here!

Sekamai : Medium quality of Akamai, which is the head part of the back of a tuna fish.

 

6. PICKLES

Crunchy taste of Japanese pickled turnips.

7. SIDE DISH

Oh this awabi abalone so so so good with that creamy miso sauce !

We are given balaone in two kinds of preparation : one that’s sliced and boiled , the other cut into cubes and mixed in miso cream.

8. ROLL SUSHI

The only place so far I like , with its roll sushi not rolled, but just by picking up the nigiri sushi with a piece of crisp seaweed ! Mined tuna is served herewith soyed rice.

9. CHIRASHI MINI DON

Because I had too much sea urchins since the previous day, I request chef to customized my rice bowl and he added thin sliced ootoro instead ! Every bits so creamy , just abit over added wasabi .

There’s seasonal fruits or ice cream served but I was too full for the night and as such, didn’t call for desserts.

FOOD : Still consistently scrumptious as my 1st trip. This time with more seasonal seafood , especially love the different types of tuna sushi served. Learning point here !

SERVICE : Friendly service chefs explaining and elaborating different types of sushi served.

AMBIENCE : Counter seatings, quiet didning.
